To get that great smoothie bowl consistency, make sure your bananas are well frozen. This also means you will need a high-speed blender to blend the frozen fruit. If you don’t have a high-speed blender, allow the bananas to defrost slightly and you may need a little more liquid to ensure it blends easily. The consistency won’t be quite as thick- but it will still taste delicious!
In this bowl, we have used a special blue spirulina powder that is from Unicorn Superfoods. We love using their vibrant superfood powders in the recipes at The Palm Tree House- they create a real vibrancy and also have tremendous health benefits.
If you don’t have access to the blue spirulina powder, you can use any other superfood powder you like such as maca, cacao, or even a protein powder. If you love the blue colour, you could also add some fresh blueberries to the blender too.

Ingredients
3 large frozen bananas chopped
½ cup coconut milk
1 tsp blue mermaid powder (from Unicorn Superfoods)
Method
Add all ingredients to your blender and blend until very smooth and creamy. Depending on your blender, you may need to add a little extra coconut milk to get everything moving smoothly.
When ready, pour into a bowl and top with your favourite toppings – granola, coconut, fresh fruit or passionfruit work well!
