New Breakfast Recipes: Mixed Berry Couscous

We’ve been revamping some of the recipes at our Bali retreat. This is a new addition to the breakfast options; a healthy, sweet breakfast bowl filled with fresh fruit, natural yoghurt, couscous and spices.

Breakfast is always a highlight of retreat and included in all retreat packages. Feast on fresh tropical Balinese fruit, homemade pancakes, fresh eggs made just how you like them, sourdough toast and spreads, granola and smoothie bowls!

Try this new recipe at home and treat yourself to a healthy substantial breakfast that will make you feel like you momentarily slipped into retreat-mode.

Meal times are always a special experience on retreat- enjoy this special time with your fellow retreat guests and explore the different tastes and flavours of Bali plus plenty of familiar western-style favourites too.

Nourish - breakfast recipes Bali Retreat

Mixed Berry Couscous

Ingredients:

1 cup couscous
1 cup apple juice
1 cup cranberry juice
2 cm cinnamon stick
150 gr raspberries
150 gr blueberries
150 gr blackberries
150 gr strawberries
1 pcs lime zest
1 pcs orange zest
200 gr Greek yoghurt
2 tbs maple syrup

Method:

Place the apple and cranberry juice in saucepan with the cinnamon stick, bring to boil, then remove from the heat and pour over the couscous.
Cover with plastic wrap & allow to stand until all the liquid has been absorbed
Separate the grains of couscous with fork then add the berries, lime zest, orange zest and fold through gently.
Serve with Greek yoghurt and drizzle with maple syrup and garnish with mint leaves.
